Responsibly sourced pike burger to our summer menu

At Restaurant Gösta, we have taken a new step in support of local Finnish food: we now serve a pike patty in our popular burger dishes, made from fish caught in Lake Keurusselkä and Lake Ähtäri. The fish is sourced from small-scale local fishermen.

This new seasonal addition responds both to the growing interest in domestic lake fish and to our desire to develop a sustainable and experiential food offering.

“We want to stand out and create truly excellent food using ingredients from our local region. The pike burger meets all these criteria,” says our restaurateur and head chef, Henry Tikkanen.

Our choice also has broader significance. Around 85,000 visitors came to Serlachius last year, and burgers are among our most popular dishes. By updating a customer favourite with domestic lake fish, we can make a genuinely impactful culinary choice.

In Finland, there has long been discussion about how to make better use of lake fish. We want to demonstrate through a practical example how local fish can be naturally integrated into modern, high-quality cuisine.

Sustainability and changing dietary habits also play a role in the background of the pike burger. “Moderation in meat consumption and a stronger emphasis on plant- and fish-based dishes are reflected in how we design our menu,” Tikkanen says.
